Coconut Tea Bread

7 tablespoons butter or margarine, softened
¾ cup sugar
2 large eggs, lightly beaten
1 2/3 cups dry shredded coconut

1 cup self-raising flour
1/3 cup sour cream
1 tablespoon grated lemon zest
1 teaspoon vanilla essence |

Preheat the oven (hot air) to 200ºC.
Cream the butter or margarine and sugar together until pale and fluffy.
Add the eggs a little at a time, beating well after each addition.
Add the dry shredded coconut, flour, sour cream and lemon zest.
Gradually, mix together, using a non-metallic spoon.
Grease the inside of a baking form with butter or margarine and then flour lightly over
Spoon into a rectangular baking form
Bake in the oven for about 1 hour
Test by inserting a stick into the center of the tea bread
It should come out clean. If necessary bake for a few more minutes
Remove the baking form from oven and let cool for a few minutes
Take out the tea bread from the baking form and let it cool down on a wire mesh
